series 5 Overheating

The early sensor and later sensor were different from each other, just as the early gauges were not wired through a regulator.
Be sure you have either;
Early gauge and sensor, or
Late gauge, sensor AND regulator.

The gauges and senders changed from series to series.
As your car is a series II, I would guess it has an older gauge and no regulator.
I believe the change was when the series 3 got the split tanks that the temp and gas gauges were run through a regulator or "stabilizer" which ran the two gauges on 10 VDC.
I believe the sending units were case sensitive due to this change.
I would bet that Sunbeam Specialties could verify and set you up correctly.
