Several suggestions:
Single wire alternator.
Voltmeter not ammeter.
350A fuse real near the battery on the + [post of the battery
40A fuse on the hot lead to the ignition switch from the power feed that connects to the battery (usually at the starter solenoid/relay)
Recheck all your high current cables to see if they are all properly crimped.
