Fluid recomendations

Getting closer and closer to getting my SII on the road, thinking about fluids now. Can anyone recommend fluids for the following?

Rear axle (SAE 80-90?):
2001 Mustang T-5 (anyone using gear oil 75w90 or 10w40?):
Datsun F-10 brake master (SAE 70?):
Clutch (I have read DOT 3 or 4 works best):

Any help greatly appreciated, would hate to use the wrong stuff . . .

90 wt in rear,2001 T5 uses Dexron ATF/ older NWC used 70 wt gear oil(I use Synchromesh), Brake and clutch use brake fluid DOT 4.
