Going from the front of the engine to the back on each bank of cylinders, are the intake valves the odd-numbered ones or the evens?

Not really trying but I can't resist. ;)

Some intakes are even and some are odd because the ports are not spaced 1:1.

The 2.8 with its uneven exhaust ports should have two intakes and/or two exhaust valves side by side. It is sort of like the Alpine's alloy head wherein the cylinder ports change their order ( 1 and 2 are mirrored by 3 and 4 cylinders causing the 2 and 3 cylinder intakes to be side by side ). I do not have a 2.8 or would try to give a more specific answer.

You should match the port and valve together to identify each valve.

If the engine is together, it might be easier to find the exhaust port, and thus, the exhaust valve. The others would be obviously, intake valves.
